Food & Entertaining: Lemon Drop Sugar Cookies

Small batch recipe for a quick and refreshing treat!

My neighbor gifted me the most beautiful home grown lemons last weekend. I was thrilled because it was one of the first hot summer days we have had this year. and Naturally, I wanted something cold and refreshing. I made a batch of homemade lemonade and while it was delicious, it just didn't quite hit the spot. I had a few lemons left and decided to play around with lemon cookies and this was a hit.

If you're looking for something lovely and refreshing to do with some summer lemons, this is it.
LEMON DROP SUGAR COOKIES
Ingredients
1/2 C. salted butter, softened
3/4 C. granulated sugar
1 T. brown sugar
1 tsp. vanilla extract
1 jumbo egg yolk
1 1/2 T. lemon zest
1 T. fresh lemon juice
1/2 tsp. baking powder
1/4 tsp. baking soda
a generous pinch of sea salt
1 1/3 C. flour
1/3 C. granulated sugar, for sugar coating
Directions
Line two baking sheets with parchmant paper.
Cream butter and sugars until light and fluffy. About 2 minutes.
Add vanilla extract, egg yolk, lemon zest and juice until combined.
In two batches, add flour, baking soda, baking powder, and salt.
Using a cookie scoop make about 15 balls of dough, roll in remaining sugar, and place on baking sheets.
Place baking sheet in the fridge while you preheat the oven to 350 degrees.
Once oven is heated, bake cookies for approximately 10-12 minutes. Cook until no longer doughie looking, but just before the edges begin to darken. Don’t let them get too golden.
Let cool and enjoy! These freeze great and are a refreshing treat straight from the refrigerator.
